These products, which can be re-hydrated and used in preparation of various foodstuffs, contain dried yolks, from which at least 50% of the original fat content and at least 50% of cholesterol content have been extracted (with respect to yolk weight) with a nonpolar solvent (e.g. n-hexane), with addition to 10-70% of an unsaturated vegetable oil (e.g. from maize), which is preferable to the saturated fat originally contained in the yolk. An edible emulsifying agent, such as polyoxyethylene (20)-sorbitol monostearate or glyceryl monooleate, is pref. added. Salt, seasoning agents and colouring substances (pref. %-carotin) can also be added. |
