PURPOSE:To prepare a food having improved flavor, by adding an emulsified citrus fruit juice or its powder obtained from an emulsion separated through an in- line extractor to the food. CONSTITUTION:10-50 wt.% of water is thoroughly mixed with an emulsion obtained by extracting citrus fruits with an in-line extractor, and wrapped in a filter cloth, and extracted very slowly under pressure in a static state to give a residuum with a water content of 30-40%. A diluent, e.g. sugar or natural gum, is dissolved in the resulting juice to give the total solid content of 20-50%, if necessary. The juice or mixture thus obtained is dried to afford citrus fruit juice powder, which is then added to a food, e.g. fruit juice drinks, candies, or ice during or after their manufacture. |
