<P>PROBLEM TO BE SOLVED: To provide a mix for allergen-free breadmaking, which is mixed with sprouted brown rice flour. <P>SOLUTION: The sprouted brown rice mix flour includes 100 pts.wt. of sprouted brown rice flour and ≤1 pt.wt. of glucomannan or konjac powder. An extract of tuberous root of konjac is glucomannan. The sprouted brown rice mix flour does not contain wheat flour, egg and milk. The sprouted brown rice flour for breadmaking has excellent texture and eating quality and slow progress of aging in spite of not using white flour and gluten. <P>COPYRIGHT: (C)2012,JPO&INPIT |
