PURPOSE: Seasoned jujube slices and a producing method thereof are provided to prevent the loss of water-soluble nutrients in jujube, and to improve the volume of the jujube. CONSTITUTION: A producing method of seasoned jujube slices comprises the following steps: dipping jujube slices in sugar soaking syrup for 30 minutes-5 hours; drying the jujube slices soaked in the sugar soaking syrup; mixing the jujube slices with a spicy additive containing 2-100% of red pepper powder; and settling the mixture for 1-2 days before drying. The sugar soaking syrup contains 20-80wt% of oligosaccharide, and 2wt% of white sugar, high fructose corn syrup, fructose powder, crystalline glucose, vinegar, or alcoholic drink. The spicy additive contains black pepper powder, chili sauce, or mustard powder. |
