FIELD: food industry. ^ SUBSTANCE: invention relates to food industry, to technology used in production of diet flour confectionary products for nutrition of diabetes patients. The methods provide for preparation of formula components, cutting of scorzonera, its drying in microwave field at specified parameters of the process, frying and cryo-grinding in liquid nitrogen to produce flour. Production of dough from prime wheat flour, flour produced from scorzonera using described technology, yolks, salt, soda, vegetable oil, phospholipids and water taken as per specified ratio, its moulding in the form of sheets and baking. Lime peel extraction with liquid nitrogen with corresponding miscella separation, cutting of girasol or girasol-sunflower or yacon or chicory or scorzonera or dandelion roots or oyster plant, its/their drying in the microwave field at specified parameters of the process. Then raw material is fried, impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of raw material and its cryomilling in medium of released nitrogen to produce flour. One mixes flour with culinary fat, sugar substitute "Sladeks" and waffle crumb to make filling, and making waffles of sheets and filling. ^ EFFECT: produced diabetic waffles have improved consistency and coffee taste and flavour with no coffee added to the formula. ^ 3 cl |
