<P>PROBLEM TO BE SOLVED: To provide an electric rice cooker provided with a Sushi rice boiling course wherein uneven boiling is eliminated and rice seasoned with vinegar that has more Umami taste and is favorably vinegared can be boiled. <P>SOLUTION: The electric rice cooker carries out a series of rice cooking steps including: a water absorption step at which a predetermined quantity of water is absorbed by rice to be boiled in a pot; a start heating step at which the rice that absorbed water is heated until the water is boiled; a boiling sustaining step at which the interior of the pot is kept in a boiled state after the completion of the start heating step; and a steaming step at which the rice is steamed after the completion of the boiling sustaining step. When the Sushi rice course is selected, a controller closes a pressure valve after the water absorption step and carries out the start heating step to increase the temperature and pressure of the interior of the pot. After the completion of the start heating step, the boiling sustaining step is entered. At the boiling sustaining step, it makes the boiling sustaining power larger than the boiling sustaining power in the standard course and forcibly opens the pressure valve by a predetermined number of times.
