The kiln (1) has a cooking cavity placed in a body (3), and a vapor generator producing vapor to diffuse in the cooking cavity. A water filling box (16) supplies water to the vapor generator by a hydraulic system, and is partially extractable outside the kiln. A control panel (7) comprises a selection unit (39) i.e. sensitive key, that controls opening of the water filling box from a raised position to an opening position with respect to an external face (23) of the kiln and draining of the hydraulic system of the kiln. An independent claim is also included for a method for controlling an operation of a kiln.
