PURPOSE: A vegetable salt containing massive amount of minerals, vitamins, and fibers, and a producing method thereof are provided to use the salt to cook clear soup with the improved solubility. CONSTITUTION: A producing method of vegetable salt comprises the following steps: crushing bay salt, and removing the moisture from the salt using a centrifuge; removing foreign materials from the bay salt; baking the bay salt at the temperature lower than 200deg C for more than 2hours; selecting particles with the optimal size from the baked bay salt; cooking the selected bay salt particles at room temperature; extracting various vegetables to obtain juice; impregnating the vegetable juice to the bay salt; freeze-drying the bay salt at -35deg C for 24~36hours; secondly selecting particles with the optimal size from the freeze-dried bay salt; and removing impurities before packing.
