The invention relates to an apparatus for determining the degree of dough fermentation. According to the invention, the apparatus is a mechanic-electronic structure comprising a cylindrical corrosion-proof vessel () with rounded bottom wherein there is introduced the dough () to be tested, the vessel () being provided with a special pressing and supporting nut () and a piston (), the dough () being tested by means of a probe which contains an electronic dynamometric cell (), a thermocouple () for measuring the temperature of the dough () and a cable () for connection to a frame () wherein there is mounted an electronic unit () which is provided with a digital display () for displaying the pressing force and the temperature of the dough () and which is provided with a serial interface for the connection to an electronic computer () coupled with the printer (). |
