摘要 PURPOSE: A long-term storage method of salted Chinese cabbage is provided to use a low temperature sterilization method for increasing the storage period of the salted Chinese cabbage. CONSTITUTION: A long-term storage method of salted Chinese cabbage comprises the following steps: storing fresh Chinese cabbage in a polyethylene container for less than 1month; salting the stored Chinese cabbage with 10~15% salting water using bay salt after removing brine; low temperature sterilizing the salted Chinese cabbage at 40~65deg C, after dipping the Chinese cabbage in an aqueous solution for sauce, antibiotics, and vitagen-K; and packing the salted Chinese cabbage.
