PURPOSE: A producing method of stock for cold noodles using chionoecetes opilio is provided to improve the taste and the nutrition of the stock by adding fermented soybean containing apple components. CONSTITUTION: A producing method of stock for cold noodles using chionoecetes opilio comprises the following steps: preparing 1.5~2kg of chionoecetes opilio, 0.5~0.7kg of radish, and 200~300g of fermented soybean paste(S10); adding the chionoecetes opilio and the radish into 10L of water, and boiling to obtain a chionoecetes opilio extract(S20); firstly filtering the extract(S30); adding the fermented soybean paste into the extract, and boiling for 1~10minutes to obtain a mixed extract(S40); and secondly filtering the extract(S50).
