PURPOSE: A producing apparatus of an emulsifying coagulant, and a soymilk coagulating device for producing bean curd are provided to obtain the emulsifying coagulant for the bean curd with the stably maintained coagulated state. CONSTITUTION: A producing apparatus of an emulsifying coagulant for producing bean curd comprises the following: an edible liquid oil supplying path(H1) for supplying edible liquid oil from an edible liquid oil tank using a metering pump; an aqueous coagulant solution supplying path(H2) for supplying an aqueous coagulant solution from an aqueous coagulant solution tank using the metering pump; and emulsification and dispersion devices(M1.M2) stir-mixing the edible liquid oil and the aqueous coagulant solution, and including coolers(R1,R2) and pressurizing units.
