PROBLEM TO BE SOLVED: To provide a process by which lowering of the reaction rate is suppressed and degraded saccharides can efficiently be produced from polysaccharides. SOLUTION: The process for production of monosaccharides, disaccharides, and/or oligosaccharides includes reacting the polysaccharides with a hydrolase in the presence of a fatty acid.
