PURPOSE: A cooking method of chicken using spring onion is provided to offer useful components of the spring onion to eaters by sprinkling spring onion slices during a cooking process of the chicken. CONSTITUTION: A cooking method of chicken using spring onion comprises the following steps: salting cut chicken meat under the vacuum condition(ST2); aging the salted chicken meat for 12~24hours at 0~5deg C(ST3); pre-dusting the aged chicken meat;(ST4); frying the chicken meat at 160~190deg C(ST5); cutting the spring onion(ST6); sprinkling the obtained spring onion slices on the fried chicken(ST7); and pouring heated sauce at 80~120deg C on the spring onion slices(ST8). |
