摘要 PURPOSE: A method for manufacturing fruit wine is provided to produce fruit wine of high quality having excellent flavor, color, and taste. CONSTITUTION: A method for manufacturing fruit wine comprises: a step of immersing rice or grains into water and steaming to prepare hard-boiled rice; a step of inoculating koji to the hard-boiled rice by a general koji tray method; a step of mixing water and yeast and performing a first fermentation; and a step of adding fruit for a second fermentation. The fruit is grape, Japanese apricot, strawberry, apple, pear, persimmon, tomato, ginseng, tea leaf, or green tea.
