The invention relates to a process for preparing a gluten-fiber composite material, wherein fibers are mixed in a dispersion of gluten. The invention further relates to a process for preparing a gluten-fiber composite material, comprising the steps of pre-coating the fiber with the gluten polymer under dry circumstances and contacting the pre-coated fibers with a mild acidic or alkaline aqueous gluten-dispersing mixture or with an alcohol/water gluten-dispersing mixture or with a non-aqueous gluten-dispersing mixture. The invention further related to he use of a composite material of claim 8 as materials for the construction of cars, as packaging material, as material for the construction of medical devices or as materials used in the food industry.
