PURPOSE: A method for rapid manufacturing of red ginseng kimchi is provided to increase nutrients of kimchi by dipping Chinese cabbage in high concentration salty water in which red ginseng extract is added. CONSTITUTION: A method for rapid manufacturing of red ginseng kimchi includes the following steps: manufacturing cabbage salting brine by adding red ginseng extract in high concentration salty water(20~30%(w/w)); manufacturing salted cabbage by washing and dehydrating Chinese cabbage for 3 ~ 6 hours in 0~60°C; preparing spiced fillings by evenly mixing kimchi seasoning including shredded radish, cayenne pepper, and garlic etc; preparing red ginseng pieces; and wrapping Chinese cabbage mixed with the filling and the red ginseng pieces. The seasoning is mixed with red ginseng extract or red ginseng powder. |
