An apparatus (1) for leavening pieces of dough (P) for use as food, which comprises at least one leavening compartment (2) provided with a plurality of shelves (3), with an inlet (4) for the pieces of dough (P) to be leavened and an outlet (5) for the leavened pieces, elements for transferring the leavening dough pieces (P) to move them from the inlet (4) to the outlet (5). The transfer elements comprise at least one continuous conveyor (6) at each one of the shelves (3) of the leavening compartment (2), for the independent movement of the pieces of dough (P) of each one of the shelves from the inlet (4) to the outlet (5).
