摘要 PURPOSE: A processing method of half-dried persimmon and soft persimmon, and a producing method of ice cream using the processed half-dried persimmon and soft persimmon are provided to minimize the destroy of nutrient components inside the persimmon. CONSTITUTION: A producing method of ice cream using processed half-dried persimmon and soft persimmon comprises the following: dipping the half-dried persimmon dried with cool air, in water for 15hours; finely cutting the half-dried persimmon; freeze-drying the cut half-dried persimmon at -45deg C for 12hours; juicing ripen soft persimmon; mixing the obtained soft persimmon juice with freeze-dried half-dried persimmon powder; and producing the ice cream with the mixture.
