Recovering by-products of distillation obtained from the bioethanol production from cereal raw material, preferably wheat, comprises: adding liquid to the flour of raw material; hydrolyzing (12) and fermenting (14) the obtained paste (10); distillating (16) the fermented substrate to provide a fraction containing ethanol and a distillation residue containing fibers and proteins; separating (18); centrifuging the liquid fraction to provide a protein concentrate fractions and effluent; drying the concentrate; recycling a part of the effluent; concentrating another part of effluent; and drying. Recovering by-products of distillation obtained from the bioethanol production from cereal raw material, preferably wheat, comprises: (a) preparing a paste (10) by adding liquid to the flour of the cereal raw material; (b) hydrolyzing (12) and fermenting (14) the paste to provide a fermented substrate; (c) distillating (16) fermented substrate to provide a fraction containing ethanol and a distillation residue containing fibers and proteins; (d) separating (18) the residue, mainly without prior dilution of the residue, between a fraction enriched in fibers and a fluffy liquid fraction; (e) centrifuging the fluffy liquid fraction to provide a protein concentrate fractions and other effluent; (f) drying the protein concentrate fraction of step (e) to provide a byproduct of dry protein concentrate; (g) recycling a part of the effluent of step (e) as an additional liquid of step (a); (h) concentrating another part of the effluent of step (e) then mixing with the fiber-enriched fraction of step (d); and (i) drying the mixture of step (h) to provide a byproduct of dry distillers grains with soluble.
