摘要 <p>Fermentation agents are made by a process in which the raw or pasteurised milk is first passed into a sterilisation appts. in which it is heated to a high temp.; it is then cooled to the desired temp. and transferred to an incubation tank. The mother strains are then added so that the ferments can develop, this development being controlled by the pH. When the development point desired is reached the ferments are pumped to a cooling appts. and then transferred to storage or the utilisation point. The prepn. of ferments is accelerated by using a plate-type steriliser-cooler; this suppresses the dead times due to the thermal inertia of the mass of milk in the tanks. By using two incubation tanks, one being in service while the other is being cleaned, the process can be made practically continuous. The tanks are made of highly polished stainless steel.</p>
