PURPOSE: A producing method of fermented soybeans brewed soy sauce is provided to insert polyglutamic acid contained in fermented soybeans obtained by injecting bacillus subtilis. CONSTITUTION: A producing method of fermented soybeans brewed soy sauce comprises the following steps: soaking soybeans in water, and steaming; injecting bacillus subtilis into the soybeans; inserting the soybeans into a sterile container, and fermenting; freeze-aging the soybeans to obtain fermented soybeans; preparing a fermented soybean block using aspergillus oryzae; and fermenting the fermented soybeans and fermented soybean block in salty water.
