PROBLEM TO BE SOLVED: To provide a method for discriminating the high pressure processing history of a food product by solving the problem that it cannot be converted to a numeric value by conventional physical, chemical and physicochemical means whether an object to be processed has been processed at high pressure and how much pressure the object to be processed has undergone. SOLUTION: Cole-Cole plots are obtained for an object food product to be discriminated, the same food product as the object food product to be discriminated but has not undergone the high pressure processing, and a plurality of the same food products as the object to be discriminated which have undergone the high pressure processing at different pressure values. By comparing the Cole-Cole plot of the object food product to be discriminated, the Cole-Cole plot of the food product undergone no high pressure processing and the Cole-Cole plots of a plurality of the food products undergone the high pressure processing, the high pressure processing history of the object food product to be discriminated is discriminated, and it is determined at how much pressure the object food product to be discriminated, which has undergone high pressure processing, has been processed.
