<P>PROBLEM TO BE SOLVED: To provide a method for drying oyster by which the oyster can be dried, enclosing the flavor and taste of the oyster, and does not mold and rot, even when dried and then stored at a normal temperature for a long period. <P>SOLUTION: The method for drying the oyster is mainly includes: mixing air with steam to form wet air having a humidity and a temperature for boiling the inside of the oyster at the atmospheric pressure; boiling the oyster with the wet air; then stopping the supply of the steam; and drying the boiled oyster with only the heated air to give a water activity value less than 0.80 Aw. <P>COPYRIGHT: (C)2011,JPO&INPIT |
