PURPOSE: Dried persimmon kimchi and a producing method thereof are provided to offer the sweet and savory taste of roasted persimmon leaves powder and dried persimmon powder to the kimchi. CONSTITUTION: A producing method of dried persimmon kimchi comprises the following steps: roasting and drying persimmon leaves to make powder; steeping roasted persimmon leaves and adding salt to make persimmon leaves salt water, and dipping cabbages to the salt water before washing and dehydrating; roasting red pepper to make powder; making dried persimmon syrup, dried persimmon spirituous liquor, and d persimmon glutinous rice porridge; and mixing the ingredients from the previous steps with kimchi seasonings and the cabbages. |
