摘要 PROBLEM TO BE SOLVED: To settle the problems of transformed host cells (especially plant cells), that, in which cells, over- or under-expression of the polynucleotide results in alteration of coffee flavor precursor levels of green coffee grain, especially levels of amino group-containing molecules (such as amino acids, peptides and proteins).SOLUTION: There are provided isolated polynucleotides encoding cysteine proteinases, cysteine proteinase inhibitors and aspartic endoproteinases, and also there are provided host cells (especially plant cells) transformed therewith.
