摘要 PURPOSE: A fruit extract producing method using a multistage ripening process is provided to prevent the growth of microorganisms by operating short ripening processes multiple times. CONSTITUTION: A fruit extract producing method using a multistage ripening process comprises the following steps: removing foreign materials from fruits(S100); adding sugar and firstly ripening before extracting juice from the fruits(S200,S300); separating solid portions and storing in the temperature less than 5deg C: adding the sugar to the solid portions and second ripening before extracting residual juice(S400,S500); separating solid portions and storing in the temperature less than 5deg C, before adding sugar and extracting the residual juice(S600,S700); and mixing all the ripening juice after filtering and sterilizing(S800,S900).
