PURPOSE: A sugar solution production apparatus is provided to produce a sugar solution for applying to bread making dough by mixing sugar and purified water with a constant mixture rate. CONSTITUTION: A sugar solution production apparatus comprises the following: a heating stirring tank(10) forming a sugar solution by dissolving sugar to purified water; a cold storage tank(20) cooling and storing the sugar solution, and including a discharge valve(25) for controlling the discharge of the sugar solution from the lower side; a transfer pump(30) transferring the sugar solution from the heating stirring tank to the cold storage tank; and a hot water tank(40) including a heater(41) and a first temperature sensor(42) inside the heating stirring tank.
