<P>PROBLEM TO BE SOLVED: To provide a rice malt composition excellent in long-term preservation stability without lowering function which rice malt intrinsically has. <P>SOLUTION: This rice malt composition is obtained by addition and mixture of 0.5-10 pts.wt. salt as 1-10 wt.% concentration salt aqueous solution based on 100 pts.wt. rice malt, and 2-20 pts.wt.
