<p>Fermented milk product with a low post-acidification and its production method, is claimed. A milk mineral concentrate (at least 0.3 wt.%) is added to the product during the production for reducing the bacterial post-acidification. An independent claim is also included for a milk mineral concentrate, which is used for the production of the fermented milk product, and the milk mineral concentrate is produced after the removal of fat, protein and water from milk. A dried or an aqueous form of the concentrate comprises (in wt.%): calcium (8-28) and phosphorus (4-14).</p> |
