PROBLEM TO BE SOLVED: To provide food additives suitably usable for significantly suppressing scorch caused when heat-treating concentrated milk, and to provide methods for significantly suppressing scorch when performing heat treatment of the concentrated milk especially ultra-high-temperature sterilization treatment. SOLUTION: An agent containing at least one of succinic acid monoglyceride and citric acid monoglyceride, a distilled monoglyceride, and preferably, further a sucrose fatty acid ester, or containing a combination thereof, is used as the scorch preventive for concentrated milk.
