PURPOSE: A fermentation mixture for manufacturing Makkoli(Korean white rice wine) is provided to easily produce Makkoli with same quality. CONSTITUTION: A fermentation mixture for manufacturing Makkoli contains 20-23 weight% of seed malt, 8-13 weight% of yeast, 9-12 weight% of purified enzyme, 1-2 weight% of sweetener, and remaining amount of lactose. The purified enzyme contains Aspergillus Oryzae and Rhizopus in a weight ratio of 4-6:6-4. |
