KOREAN INTESTINE-DERIVED MICROORGANISMS HAVING SAPONIN-BIOTRANSFORMING ACTIVITY AND PROCESSES FOR PREPARING FERMENTED GINSENG USING THE SAME

PURPOSE: A novel Lactobacillus sp. strain with saponin bioconversion ability and a method for producing ginseng fermentation using the same are provided to obtain ginseng fermentation with high ginsenoside Rg3 and Δ20-ginsenoside Rg3 content. CONSTITUTION: A Lactobacillus plantarum KFCC11434P has saponin bioconversion ability. A Lactobacillus sakei KFCC11435P has saponin bioconversion ability. The Lactobacillus plantarum KFCC11434P or Lactobacillus sakei KFCC11435P is used for producing ginseng fermentation by inoculating to ginseng and culturing. The ginseng is raw ginseng, white ginseng or red ginseng.
