PURPOSE: A fermented red ginseng and a method for manufacturing the same are provided to increase the amount of sugar and ginseng saponin including Rf, Rh, and Rb_1 and to manufactured the fermented red ginseng using a fermentation method comprising two steps using specific microorganisms. CONSTITUTION: A method for manufacturing a fermented red ginseng comprises the following steps: pulverizing ginseng into a particle size of 200μm or less; obtaining a ginseng extract by adding 5%(w/v) of ginseng powder to water and performing hot water extraction at 50rpm for 48 hours; adding 1.0%(w/w) of glucoamylase to the ginseng extract and reacting the mixture in a shaking water bath of 60°C at 100rpm for 3 hours; inoculating 2.0%(v/v) of Bacillus sp.N2 culture medium to a fermented red ginseng liquid and fermenting the mixture at 37°C for three days; filtering the fermented red ginseng using a filter paper having a size of less than 0.5μm or through centrifugal filtration; and sterilizing the red ginseng at 90°C for 30 minutes and inactivating an enzyme.
