<P>PROBLEM TO BE SOLVED: To provide a foamable emulsified oil and fat composition for cakes, capable of obtaining rude cakes such as a sponge cake of a separate treatment manufacture method by an all in mix production method regardless of a continuous system or a batch system. <P>SOLUTION: There are prepared cakes using a foamable emulsified oil and fat composition for cakes, which composition contains 5-40 wt.% edible oil, 3-10 wt.% polyglycerol fatty acid ester of ≥6 HLB, 2-8 wt.% glycerol fatty acid ester and, further, 0.1-8 wt.% at least one polymer selected from soybean protein, whey protein, hydrolyzate of cellulose and gluten, in whole foamable emulsified oil and fat composition for cakes, and has ≥10 foams having ≥1,500 μm maximum major axis per 400 mm<SP>2</SP>in observation with a scanner, or cakes having 250 per cm<SP>2</SP>or less foam number measured by foam analysis using an image analysis soft ware [Image J] and 0.15 mm<SP>2</SP>or more foam average area. <P>COPYRIGHT: (C)2010,JPO&INPIT |
