<P>PROBLEM TO BE SOLVED: To provide a beverage containing lignan compounds having less odd taste derived from an emulsifier and an emulsification stabilizer, excellent in senses, hardly causing aggregation or precipitation, and excellent in external appearance. <P>SOLUTION: A method for producing the beverage includes obtaining a water phase by dissolving each a hydrophilic emulsifier and an emulsification stabilizer (methyl cellulose) in ion exchange water to make a prescribed concentration, obtaining an oil phase by mixing oil and fat and a hydrophilic emulsifier at a prescribed ratio, heating the mixture to 80°C to melt followed by dissolving lignan therein, and charging the water phase heated to 80°C into the oil phase heated and melted to more than a melting point of oil and fat. Furthermore, the method includes emulsifying the product while bathing at 80°C, stirring the product at 10,000 rpm for 10 min using a disperser, and after stirring, cooling the product together with a container to bring to ≤10°C by ice water, and mixing 0.2% of the emulsified composition, 7% sugar, 0.3% sour agent and 0.1% spice with water. <P>COPYRIGHT: (C)2010,JPO&INPIT |
