<P>PROBLEM TO BE SOLVED: To provide a method for producing a colored Chinese dumpling, the coat of which is colored, the quality of which is excellent and also the safety of which is high. <P>SOLUTION: The method for producing colored Chinese dumpling includes wrapping ingredients with a coating material obtained by maturing coating dough prepared by adding water and monascus to coat a raw material consisting mainly of wheat flour at 5-10°C in a refrigerator or at normal temperature and rolling the matured coating dough out; and forming the wrapped ingredients.
