FIELD: food industry. ^ SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method involves preparing recipe ingredients, extracting vanilla by liquid nitrogen separating corresponding miscella, cutting yacon, drying it in microwave field at preset process parametres and roasting yacon and drying in microwave field at preset process parametres. Moreover, the method involves drying up rosehips, apples and pears by convective method, roasting barley grain, mixing yacon with rosehips, barley grain, apples and pears, pressure. Then the pressure is released down to the atmospheric pressure and the mixture is being frozen at the same time and cryomilled in medium of evolved nitrogen. ^ EFFECT: method enables to produce new flavoured coffee drink out of unconventional raw material according to nonwaste technology. |
