A pelt cutting system includes a rotating cutting device 4 to contact and cut or grind a portion of pelt or skin from a part, in particular the hock, of an animal carcass, and a support member 10, 12 opposite the cutting device which prevents movement of the hock away from the cutting device. In use, the carcass suspended on a conveyor is transported so that the hock moves on the path D between the cutter and the support, and the cutter is moved in direction P to grind a portion of the skin from the hock.
