<P>PROBLEM TO BE SOLVED: To provide a cooling method capable of preventing drying of a cooled object, and capable of reducing cooling time. Ž<P>SOLUTION: The cooling method is provided with a precooling process of carrying out cooling of the cooled object while suppressing a flow of air between a cold insulation chamber and a cooling chamber until the cooled object reaches a predetermined temperature just short of a freezing point neighborhood or a temperature region wherein the cooled object is most degraded due to its physicality, and a rapid freezing process of carrying out cooling of the cooled object while promoting the flow of air between the cold insulation chamber and the cooling chamber from the predetermined temperature to a target refrigeration temperature.
