<P>PROBLEM TO BE SOLVED: To provide a method for producing a sucrose fatty acid ester without using a harmful organic solvent, and inhibiting the formation of fatty acid salts requiring much labor and a large amount of purifying solvent for removing them. Ž<P>SOLUTION: This method for producing the sucrose fatty acid ester is characterized by heating the sucrose and a fatty acid ester in the presence of water under a reduced pressure for performing an ester-interchange.
