PURPOSE: A manufacturing method of kimchi using magnesium salt and calcium salt is provided to prevent the kimchi from becoming soft by adding magnesium salt and calcium salt which is extracted from deep sea water. CONSTITUTION: A manufacturing method of kimchi using 10-30wt.pt. of magnesium salt and calcium salt includes a step for mixing magnesium salt extracted from deep sea water with vegetables, and a step for adding 10-30wt.pt. of calcium salt extracted from the deep sea water to season the kimchi. The magnesium salt and the calcium salt are produced from the deep sea water.
