摘要 PURPOSE: A method for manufacturing the sikhye containing Rubus Coreanus, and the sikhye containing Rubus Coreanus prepared by the method are provided to prevent the breakage of carbohydrate, organic acid, vitamin, phenolic compound, etc of Rubus Coreanus. CONSTITUTION: A method for manufacturing the sikhye containing Rubus Coreanus comprises the steps of soaking unhulled whole grain barley in water for 15~24 hours; sprouting the soaked malt at 22±3°C with spraying water, drying the sprouted malt to the water content of 10~15% with warm wind, removing the barely skin from the dried malt and pulverizing it to obtain the powdered malt of 0.5~2.0 mm; extracting wild berry in water at 50~60°C for 2~3 hours to extract a Rubus Coreanus component, filtering it, and concentrating it under reduced pressure at 50~60°C; dissolving the powdered malt in warm water to obtain the malt solution; pouring 10~20 L of the malt solution based on 10 kg of bap and maturing it at 30~45°C for 5~7 hours; and adding 2~3kg of a black raspberry extract to it and maturing it at 70~80°C for 30~90 min with stirring.
