<P>PROBLEM TO BE SOLVED: To form ice crystals with less entrainment of solutes efficiently. Ž<P>SOLUTION: A progressive freeze concentration method comprises causing cooling brine for cooling a target liquid to flow to the reverse side of a freezing plate 11 whose surface comes in contact with the liquid and circulating the cooling brine through a circulation passage so as to form ice crystals S of the liquid on the surface of the freezing plate 11 and thereby concentrate the liquid. In the method, a freeze process of making ice crystals grow on the surface of the freezing plate 11 while circulating cooling brine and an aging process of stopping the growth of ice crystals for aging by removing the cooling brine from the circulation passage are carried out alternately. In the aging process, the solute is washed away as the tip of the branch of dendrite in the ice crystals S becomes round, resulting in the reduction of the solute entrained in the ice crystals S. Since the cooling brine is removed from the reverse side of the freezing plate 11, there occurs less energy loss, allowing efficient freeze concentration. Ž<P>COPYRIGHT: (C)2010,JPO&INPIT Ž
