METHOD FOR THE PRODUCTION OF INVERT SUGAR SYRUP FROM RAW SUGAR

PURPOSE: A method for producing invert sugar syrup from raw sugar is provided to improve storability and usability of the invert sugar syrup. CONSTITUTION: A method for producing invert sugar syrup from raw sugar comprises the following steps of: mixing raw sugar solution with solid content of 35-45% and invertase to obtain an invert sugar solution; adding 9-15 parts raw sugar solution to the 100 parts invert sugar solution; and filtering, bleaching, ion-refining, and concentrating the mixed invert sugar solution. The obtained mixed invert sugar solution contains 38-45wt% glucose, 5-12wt% saccharose, and 43-47wt% fructose. The invertase is extracted from Saccharomyces cerevisiae yeast strain. The invert sugar solution contains 47-49wt% fructose and 47-49wt% glucose.
