PURPOSE: A method for preparing half dried saury is provided to improve oxygen-resistant and antibacterial properties. CONSTITUTION: A method for preparing half dried saury comprises the following steps of: removing a fishbone from saury; dehydrating the saury on a wicker tray for 1-2 hours; mixing 1wt% fermented vinegar solution and 50-100wt% freshwater to prepare a first functional liquid; dipping the dried saury in the first functional liquid for 5-10 minutes; fermenting and drying the saury until the moisture content becomes 25-40%; mixing 1wt% pine mushroom flavor, pine mushroom fruit body powder, and pine mushroom extract in the 50-100wt% freshwater, and 1wt% propolis in the 500-1000wt% freshwater to prepare a second functional liquid; and spraying the second functional liquid to the saury and drying it in a cold-air room for 12 hours. |
