摘要 |
FIELD: food industry. ^ SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved scallops. Preservation method includes pre-processing and packing of scallops into jars. Scallops are filled with hot water at 85C for 2-3 minutes. After that water is replaced with filler at 95C, jars are sealed and sterilised in autoclave. ^ EFFECT: invention allows to decrease sterilising duration, decrease inequality of thermal processing and provide saving of thermal energy. |
