摘要 <P>PROBLEM TO BE SOLVED: To provide a method for improving the flavor of an astaxanthin-containing extract and a flavor-improved astaxanthin-containing extract. <P>SOLUTION: The method for improving the flavor of an astaxanthin-containing extract includes the steps of: adding and mixing 0.5 to 1000 parts by mass of ethanol to 1 part by mass of the astaxanthin-containing extract so as to obtain an ethanol mixture; collecting a solid precipitated from the ethanol mixture obtained; and drying the solid collected.
