In a process for preparing reconstitutable dehydrated cooked mashed potato of relatively high bulk density, not more than 5% by weight, and preferably at least 1/2 %, of dehydrated potato fines containing a substantial proportion of broken cells, e.g. potato flour, is incorporated in cooked mashed potato and a film of the mixture is dehydrated on a heated surface, e.g. a double drum drier, and then broken into flakes capable of passing a 3 1/2 mesh (U.S.) sieve, any material finer than 12 mesh, or even 28 mesh, being removed from the flakes and used as fines in subsequent processes. The cooked mashed potato is preferably prepared from raw potatoes having a low solids content e.g. less than 20% by weight, and prior to its dehydration additives such as non-fat-with-solids, glyceryl mono palmitate, sodium sulphite, may be incorporated. |
