POLYPEPTIDE WITH ISOAMYLASE ACTIVITY AND USE THEREOF

PURPOSE:To obtain a product with high maltose content by elucidation of the amino acid sequence of isoamylase to enable security in the supply and by hydrolysis of starch using the resultant polypeptide with isoamylase activity and beta-amylase. CONSTITUTION:The objective polypeptide with isoamylase activity, containing one or pref. both of ammino acid sequences of formula I and II respectively. Preferably such a polypeptide having the amino acid sequences of formula I and formula II respectively, in this order from the N-terminal side. Furthermore, it is preferable that said polypeptide have an amino acid sequence of formula III as the partial amino acid sequence containing the N-terminal.
